Piano song of the day

Okay, so I've decided that one of my presents to my mom for Christmas this year will be a cd. She likes piano music.

Alternatively, any songs that you think are particularly deep but not dark from rock bands that maybe have some acoustic guitar in them and no screaming would be acceptable.

I bought my Mom a collection of Soft piano music called "Romantic Piano" or something like that. It had some really good piano covers of popular songs like "Fields of Gold, Lady in Red, My Heart Will Go On, etc and some Disney songs. She seemed to like it.
